SALMON POKE BOWL RECIPE

Ingredients

- 100g Brown Rice (cooked weight)
- 1/2 tsp Soy Sauce
- 1/2 tsp Sesame Oil
- 75g Cucumber
- 50g Edamame
- 100g Smoked Salmon
- 0.5g Capsicum
- 1 tsp Sesame Seeds
- 1 pinch Coriander
Method
- Cook rice as per package instructions.
- Meanwhile, remove core from capsicum and thinly slice. Thinly slice cucumber.
- When rice has cooked, mix in soy sauce and sesame oil to season.
- Place edamame beans in a bowl and pour boiling water over to cook. Leave for a minute and then drain.
- Place seasoned rice in a bowl, with capsicum, cucumber, edamame beans and smoked salmon beside.
- Sprinkle sesame seeds and chopped coriander over.
- Enjoy.
